So, would you be able to change it via the monitor, but the different interiors the sound comes from would have that from place instead of the unhearable 2013+ one in the mod at current?

Yes, every interior will have your own ambient sound, for example:

Capaldi (Toyota) TARDIS Interior have its own ambient sound, and if you want you can change it to the 1963 ambient sound via the TARDIS Monitor
