The Cipherhunt and the journal have been made to add to the lore of  the series,  to bring Gravity Falls' mystery element "to life", everyone knows that the series ended, and so will the Cipherhunt, same for the journal, but most of the fandom has accepted it. It's not about "keep the fans fed", it's about having additional fun and meeting members of the fandom.

I have personally never watched or seen Gravity Falls, I have been scolded for not seeing it but i'm just hooked to Doctor Who so much i'm barely watching anything else, the only things i've watched the full thing of cartoons were Fosters Home for Imaginary Friends, and i finished all the seasons that are currently on hulu.
